I just got this and I wish I had a roast to cut up right now!!! This knife is a thing of beauty. The blade is flexible but at the same time feels super solid, not to mention the edge. This thing comes incredibly sharp, but me being me I had to run it over my strop a few times and GEEZ this thing is SCARY sharp. The knife just looks incredible and the handle is comfortable even in the hands of my 11 year old daughter. The fit and finish is spectacular. I really only got this to fill a hole in a knife block but I figured " I've never had a carving knife and I'm trying to build the last set of knives we will own so what the hay." But now that I have it I can see that it will be a very useful addition to our kitchen arsenal. I looked at many carvers and was looking for the place where quality meets price point and this was the obvious choice to me. I have to say though that the quality of this knife will exceed many at a much higher price point and it just looks awesome. This is a solid purchase and you will not be displeased with this knife. I have a Dalstrong chef's knife that I bought last summer. It works great and is a thing of beauty, but it's not quite long enough to slice a large prime rib without some saw marks on the finished slice. Being somewhat analretentive, I opted to augment my collection with this carving knife in order to present prettier slices to my family and guests; it's not that they really care, it's that I care.

This slicer works great. It's stiffer than the one I had a few years back and gave to my daughter as a house warming gift, so it slices smoothly with good control. The handle is good, too, so that I can render good purchase and therefore good control. And did I mention that it looks so impressive at the table that people simply assume that I'm good at what I do. Or, at least I think I look more professional.

I looked at other knives in the same category and price range and decided on this one because I trust the brand based on my experience with the company, plus you'll notice that it comes with a sheath that is made to fit this knife. That is important to me because I store my slicer in a drawer.

I highly recommend this slicer.

Dalstrong makes a GREAT product, I know some of the "pro knife" guys may say there is better stuff out there or that they are "housewife" knives, but the truth is I owned a restaurant and we used Dexter and Victorinox white handles, which are also great knives, BUT they don't look great in my high end kitchen laying next to my 36" gas range, THESE DALSTRONGS DO and they perform better than any other blades I have tried from mild ot wild... I have a few "real Japanese" damascus/hammer knives and these look much better, feel much better, and cut on par with all of them...

OK, now for this knife, I only use a few knives for cooking, a medium length paring knife, a serrated utility knife (6"ish), an 8" gyuto or chefs knife, a boning knife, and a 6-7" nakiri (I love the nakiri (vegetable cleaver) for veggies. This Carving knife will only be used for large fruits or veggies (watermelon, pineapple, spaghetti squash,etc) and for carving prepared meats, roasts, ribs, poultry, etc... Its replacing my 14" wusthof (a little too stiff for my tastes and a bit longer than is needed).. 1 more note, I store this with a winco USA carving fork, which for the money ($17) is an amazing tool and accompanies this well to complete a carving set...

Was looking for a carving knife for a long time and have found it with Dalstrong. Knife is very well made. Handle is comfortable and easy to grip. Blade is very sharp and keeps its edge for a long time. I have used it on Hams, turkeys, pork, and roast beef and love the way it can slice any way you want it too.(thin or thick). Like most long carving knifes the blade is flexible but also firm has a firmness to it. The blades sharpness and length does the work for you and has made holidays much easier during carving time.. Pricing for the knife is very good for this type of quality..

I purchased this knife for slicing brisket. The 12 inch ham/meat slicer arrived quickly and I put it to use two days later when I smoked a brisket.

The knife performed beautifully and was a much better option than the 8in chef’s knife I have used in the past. I was able to produce nice, even slices out of an 18lb brisket, with none of the sawing or unevenness I was used to with a smaller knife.

The handle has a good, solid feel to it.
I really like the sheath that comes with the knife. It covers the entire blade and helps store the knife without worrying about the edge.
The knife seems well-balanced.
Great price.

This is my first Dalstrong knife, but as my other knives are going on 14 years old, I will look into replacing them with additional Gladiator series knives.

I'm not a professional chef, just a backyard BBQ guy. But I AM a tool nut, and I want high-quality tools, whether I'm working on a car, or prepping meat for the grill. I bought a Dalstrong knife based on my research into quality but reasonably priced chef knives. This knife makes number 4 in the growing (though originally unintended collection) - I keep coming back to Dalstrong because every knife I buy shows me a new dimension of what it is like to have sharp, well made, well balanced knives made for man-sized hands. This one is no execption: it cuts through raw or cooked meat like butter, and I love it.

I have been looking for the perfect carving knife and have found it in the Dalstrong Slicing Carving knife I purchased to carve my perfect standing bone in prime rib roast. This knife has answered all my queries and does an excellent carving/cutting job. Your service was very fast and efficient. Having more needs in your products, you will certainly hear from me again. I use my chef's knife for just about everything, but it's not the best tool for carving turkeys or large roasts so this Christmas I finally got myself a carving knife, and what a difference having the right tool for the job makes! Thinner and a lot longer than my chef's knife, this carving knife has a long narrow blade that tapers to a fine edge that's perfect for slicing large hams, roasts, and that huge Thanksgiving turkey. The long straight blade allows me to use horizontal strokes rather than downward pressure when carving so I can get straight even slices from the largest of roasts, and the divots along the edge keep the food from sticking so there's no drag.

The handle is comfortable to hold and the knife feels well balanced. The blade is moderately flexible which lets me follow the curvature of a carcass to get around the bones. It has an extremely sharp edge, a well-balanced, comfortable handle, and plenty of flexibility. Thick or thin slices, hot or cold meat it didn't matter. This carving knife produces long straight cuts without having to saw into foods making for a beautiful presentation.

It's razor sharp right out of the box of course, and it will probably stay that way for a long time unless you do a LOT of roasts and use it frequently in which case it will need to be sharpened. I notice that the divots don't go all the way to the edge though, so it will be easy to sharpen whenever it finally needs to be.

If you like roasts or ham, get this knife because it makes like so much easier than trying to slice with anything else. It even comes with a sheath for storage between use which is nice. Personally, I always hand wash knives like this and dry them with a towel before putting them away. Never ever in the dishwasher! Anyhow, the bottom line is this is a terrific knife for the job and very reasonably priced for the quality too.

Not sure why some folks are saying this knife isn't sharp...I was reaching for a bread knife to cut a tomato and accidently picked up this one. This knife went thru the tomato like butter.........When I finish cutting the tomato I was shock to find out it was the Slicing Carving Knife.....This knife will no doubt cut thru meat like butter......Welcome to my kitchen DALSTRONG........

Splendid carving knife. I used it to slice a 7 pound prime Rib Roast for my dinner guests and it carved like a dream! I was able to slice the meat without any stress on my hand or wrist. Ergonomically designed even for a leftie like me. Highly recommend this product.
