First, yes, I can tune a guitar by ear, but a good tuner is faster. (Which matters on when an audience is waiting) I use a two stage process. If something sounds wonky, I give all the strings a strum and this tuner identifies the problem strings, and I then use the "single string" mode to fix those strings. With fixed bridge guitars, I can fix my tuning in around 10 seconds with my sound OFF. In a coffee house gig, the audience might tolerate listening to intervals while you tell a story, but for larger gigs that doesn't work. Having a roadie hand me a tuned guitar is great, but I don't always have that. This is the best solution I have found for not having a roadie. One warning is that they don't work so well for sneaking in some tuning when the stage is loud, but I usually have a wired-in tuner then. I love these tiny little devices.
