It's possible, but none of the options are for novices. If you decide to do this, I suggest you do your research first and purchase from places with significant return policies. It's obviously in the cable companies' interests to make doing something like this difficult. I know of three approaches - two which are relatively straight forward, and another that is much more difficult and risky.
The first is to use a PVR (personal video recorder) to capture the HD video coming out of your cable company's cable box/DVR. This Hauppauge 1212 seems to be the best at doing this according to the various AVS forums. It sells for $210 on Amazon. It only accepts HD signal from the cable box/DVR using component cables (not HDMI cables). I have not found a comparable product accepting HDMI input.
